Teri’s Black Bean Soup Which Really Is More Like Vegetable Soup That Z Says Needs Chicken
adapted from several recipes found online

2 tbs Olive Oil
1 small Onion, diced
4 cloves of Garlic, minced
1 Red Pepper, diced
14 oz can of Diced Tomatoes with Green Chilis
32 oz Broth (I used vegetable, but chicken would work too.)
2 heaping handfuls of Kale, shredded (I don’t know how to measure kale.)
26.5 oz (or 1.1 lbs) can of Black Beans, drained
2 oz Black Olives, sliced
14 oz can of Corn, drained
1 bunch of Cilantro (if you are into that kind of thing)

Heat the olive oil in your soup pot. Add the diced onion and cook for 3 minutes. Add garlic, cook for 5 minutes. Add red pepper and cook 3 minutes. Add tomatoes and vegetable broth. Bring to boil, turn down to simmer and cook for 10 minutes. Add the kale, cook for 5 minutes. Add black beans and olives, cook for 5 minutes. Add corn, cook for 5 minutes. Makes 4 big bowls of soup. Serve with tortilla chips and guacamole or corn bread (oh, cheddar jalapeno corn bread would be awesome!). Feel free to add chicken and invite my husband over for dinner.
